A colourful starter, a quick lunch or if you are just in a hurry, the avocado boats are the ideal choice. So easy, wonderfully delicious, takes minutes to prepare, whether at home or at the office. This avocado salad has a great abundance of healthy proteins, unsaturated fats, antioxidants and vitamins also thanks to of prawns, beans and sweet peppers. Just what it needs to stay in shape and satisfy the palate without feeling guilty of overindulgence. What are you waiting for?
- 1 ripe avocado
- 8 pre-cooked king prawns or 12 shrimps
- pre-cooked mixed beans
- 1/4 red sweet pepper
- 1/4 green sweet pepper
- vinaigrette of your choice
- black pepper
METHOD Cut the avocado in half, twist the two halves and remove the stone.
Scoop out the flesh being careful not to damage the shells, dice and put back in the shells.
Top with kings prawns or shrimps, mixed beans, chopped sweet pepper, a splash of vinaigrette and fresh ground black pepper.
