Beef Stuffed Round Courgettes

Bored of the same veggies? For once let’s skip peppers, mushrooms and classic zucchini! It’s time to make something cute and still yummy. What about these gorgeous beef stuffed round courgettes? A succulent dish that definitely rocks on the table and even children get excited. I was also excited when I first saw the picture posted by my Maltese friend. I had never come across such tiny courgettes and it’s about time to try… so let’s hollow them 🙂

  • 4 round courgettes
  • 1 tsp chopped garlic
  • 1 onion finely chopped
  • 300 g minced beef
  • 2 tbsp parmesan cheese
  • 1 tsp tomato purée
  • 1 tbsp olive oil
  • 4 tbsp grated cheddar cheese
  • 1 egg

METHOD Wash the courgettes thoroughly, cut the top and hollow out the inside leaving the edge around 1 cm thick and finely chop the flesh that is hollowed out.

Lightly fry garlic, onion, tomato purée, courgette flesh and minced beef. Remove from heat and add parmesan cheese and beaten egg. Mix thoroughly.

Refill the hollowed courgettes and add 1 tbsp of grated cheddar cheese on top of each courgette and place its lid back on top.

Bake for approx 1 hour or until tender.

For those who are not meat lovers, beef mince can be substituted with lightly boiled rice and tuna chunks and omit the egg.
