Why did I make blueberry pancakes? Because it was Shrove Tuesday last year, pancake day here in the UK, and I wanted to make pancakes… but with a twist. So I slightly Americanised them by adding blueberries, however, sticking with tradition, I kept the pancakes British, thinner and larger than their American counterparts! 🙂INGREDIENTS
- 3/4 cup of plain flour
- 3/4 cup of milk
- 1 tablespoon of melted butter
- 1 teaspoon baking powder
- 1 small pinch of salt
- 1/2 teaspoon of sugar
- 1 beaten egg
- 3/4 cup of blueberries (or any kind of berries)
- olive oil for frying
METHOD Mix the ingredients all together with a whisk or a blender. When done, add blueberries.
In a frying pan add a tablespoon of olive oil and when hot pour a dollop of mixture and cook both side.
Sprinkle with icing sugar and serve hot with a topping of your choice.
