Blueberry Pancakes

Why did I make blueberry pancakes? Because it was Shrove Tuesday last year, pancake day here in the UK, and I wanted to make pancakes… but with a twist. So I slightly Americanised them by adding blueberries, however, sticking with tradition, I kept the pancakes British, thinner and larger than their American counterparts! 🙂

blueberry pancakes INGREDIENTS
  • 3/4 cup of plain flour
  • 3/4 cup of milk
  • 1 tablespoon of melted butter
  • 1 teaspoon baking powder
  • 1 small pinch of salt
  • 1/2 teaspoon of sugar
  • 1 beaten egg
  • 3/4 cup of blueberries (or any kind of berries)
  • olive oil for frying

METHOD Mix the ingredients all together with a whisk or a blender. When done, add blueberries.

In a frying pan add a tablespoon of olive oil and when hot pour a dollop of mixture and cook both side.

Sprinkle with icing sugar and serve hot with a topping of your choice.

I am not a professional chef, but just an ordinary guy who loves international food, trying new flavours and cooking when I am in the right mood. I don’t usually follow recipes, unless they are too complicated and need to be read. I love using whatever ingredients are available at home and make my meals from scratch.
