Chicken On The Way

Chicken on the way is extremely tasty thanks to the way it is cooked: seared, seasoned and baked. Its tender meat and the gravy make it a perfect main whether you’re on your own or if you have guests. This chicken recipe is not only delicious, but very easy to prepare. No special cooking skill required to deliver a high class dish.

  • 1 small chicken
  • 100 g of bacon
  • 2 tablespoons lard
  • 250 ml double cream
  • 300 ml chicken stock
  • 250 g carrots
  • 150 g parsley
  • 100 celery
  • 2 onions
  • 1 lime
  • 1 tablespoon mustard
  • 1 tablespoon sugar
  • sea salt
  • black pepper
  • all spice mix
  • bay leaf

METHOD Cut the chicken into eight pieces and gently sear them in a pan with chopped bacon, sea salt and black pepper for few minutes.

Remove the chicken pieces and put them in a big oven tray with grated carrots and celery, chopped parsley, all spice mix and leave them to rest for few minutes. Add chopped onions, bay leaf, sugar and chopped lime. Pour the chicken stock, the cream and bake until the chicken meat gets tender.

When the chicken is ready, remove it from the oven tray along with the chopped lime and bay leaf and liquidise all the remaining broth and veggies. Season with mustard, lime juice and sugar. If necessary, thicken the broth with a bit of flour, water and simmer until is ready.

To serve, pour the gravy on a plate and top it with the chicken pieces, slices of  lime and slices of bread.
