Creamy Pea Soup

Creamy pea soup is healthy, light, rich in vitamins, antioxidants and of course very delicious. This pea soup recipe had a veltety texture, a sweet and savoury taste which it makes it very versatile. It can be served as starter, main or anytime you feel you want to treat your body with goodness. What are you waiting for? It only takes a couple of minutes of your time for you to enjoy it this unique pea soup.

  • 2 cups peas
  • 1/2 medium yellow onion
  • 2 garlic cloves
  • 1 carrot
  • 2 tbps miso paste
  • 4 cups water or vegetable stock
  • 2 tbps olive oil

METHOD Slice the garlic, chop the onion, carrots and saute them with olive oil in a medium pot for 3-5 minutes on medium heat.

Add  the peas, miso paste, water or stock and stir everything. Cover with a lid and simmer for 20 minutes.

Transfer all the pot content into a blender and liquidise until you get a creamy and smooth texture.

Serve with fried crispy onion slices.
