Easy Peasy Fried Eggs

I called it ‘Easy Peasy Fried Eggs‘ just because it literally takes 5 minutes to prepare it. Whether for breakfast, an afternoon snack or if you crave something savoury, this herby munch will definitely satisfy you.

  • 2 eggs
  • 2 spring onions
  • whole basil leaves
  • extra virgin olive oil
  • black pepper
  • sea salt

METHOD In a pan gently fry some chopped spring onion with extra virgin olive oil. Try to keep the onion at the centre of the pan and when the it starts getting crispy and brown, put 2 whole eggs (without shells obviously) right on top of it and break the yolk with a fork. Season with salt & pepper and a few of whole basil leaves. Cook on both sides until the eggs are set. Serve on toasted bread with extra virgin olive oil on it.
