Rigatoni with smoked salmon is one the most famous and popular pasta dishes couldn’t be missed. It’s so easy to make it, simple and so delicious. It doesn’t require great cooking skills and every time is a success either you cook it for yourselves or if you have guests. Do not forget to add fresh chopped parsley and freshly ground pepper to get the best flavour.
- 4 small spring onions
- 150 g sliced smoked salmon
- 250 g rigatoni or any pasta shape
- 3 spoons of extra thick cream
- fresh parsley
- extra virgin olive oil
- black pepper
- sea salt
METHOD In a large pan, chop the spring onions and fry them with extra virgin olive oil. When soft add the smoked salmon and after 15 seconds turn the heat off.
With a flat wooden spoon chop the salmon and when done add the extra thick cream, some chopped fresh parsley and freshly ground black pepper.
Cook the pasta in slightly salted water and when ready, keep some cooking water in a mug, drain the pasta and add it to then pan with the salmon and stir everything all together. If too dry, add some cooking water.
Serve on a plate and sprinkle it with extra fresh parsley and ground black pepper.
